Mandarin Orange Cake Delight. So Good!
Here it is in January, and it's been quite the harsh winter in Wisconsin. School already called today saying that school will be closed for Monday and Tuesday due to Dangerous wind chills. The wind chills are suppose to be -20 below Zero and -26 Below Monday night. Brr. Well I guess we're not going anywhere soon...
Today would be a good day to bake something I haven't made in a while. Went to the pantry and found some cake mixes that usually don't get used unless there is a Birthday. I found some yellow cake mix and decided to make a mandarin cake with a twist. Here's the Recipe.
Mandarin Orange Cake Delight
Ingredients:
For Cake
1 box yellow Duncan Hines cake mix
1 11oz. can mandarin orange
1 cup graham cracker crumbs
4 Tbs. butter
Frosting
1 8oz. container cool whip
1 11oz. can mandarin orange
1 cup confectioners sugar
1/2 cup sweetened coconut flakes
Directions:
Preheat oven 350°
Make cake mix to directions on box. Substitute the water for the mandarin juice on the box.
Add mandarin oranges and mix.
In medium bowl add 1 cup graham cracker crumbs. Melt butter and add to crumbs.
Take your 9x13 baking dish and spread crumbs on the bottom and press down with fork.
Pour cake mixture over top.
Bake 30 min. or until tooth pick comes out clean. Cake should be golden brown.
Frosting:
In Medium bowl add cool whip. Drain mandarin oranges and using a fork squish the rest of the liquid out of the oranges in the can and drain again. Add 1 cup powdered sugar and coconut flakes. Mix well.
Serve cake Warm with the cold frosting on top.
This was so delicious! I had a couple slices.
The taste was awesome. The crunchy bottom and the cold frosting made my palate...
